Turkey and cheese roll-ups: slice turkey and cheese into thin strips and roll them up. Add a side of crackers or carrot sticks. 3. Pasta salad: cook pasta and mix in chopped vegetables, such as cherry tomatoes and bell peppers. Add a protein, such as diced chicken or hard-boiled eggs. 4. Hummus and vegetable wraps: spread hummus on a whole grain wrap and add sliced vegetables, such as cucumber and bell peppers. 5. Quesadillas: fill a whole grain tortilla with cheese and sliced vegetables or diced cooked chicken. Grill or toast until the cheese is melted.
